I am thinking of making some more fudge before Halloween, as well as making some Saltwater Taffy before Christmas!!

Well I am wondering if I should make oreo balls with the Halloween oreos. Hmmm. I may make a pumpkin cake too but we will see. HAPPY HALLOWEEN TO EVERYBODY!

I now own 1/2 of a house. I am just looking to see what the future holds. We will get married before we move in together.

Saltwater taffy sounds fine to me, Vernon!!! YUM! I haven't had that in years- and I must say, I never had it homemade!!!

Opieslady, what a wonderful idea to use those Halloween Oreos!!! I hope you do end up trying that and letting us know how it comes out! How are things with you and how is the new house coming along???

I will let you know if I make those Halloween oreos. Things are going fine with me. My sweetie and I have been working on the house pretty much every weekend. The bakery decided to close on Saturday so basically on a on call basis for Friday and Saturday because those were the only days I could work. Also, the house is going slow because of the electrical and all that. Does anyone happen to have a 2008 National Electrical Code Book? This would come in handy so we could make sure everything is basically to code. Thanks if anyone does. Also, I have decided the kitchen will be tractor (my sweetie loves tractors) and I am also having a butterfly bathroom. Also, the kitchen and dining room are connected (same room) but kinda want to separate it by a different theme in there. I was thinking sunflowers or wildflowers for that part to go with the tractor theme. Any ideas that anyone may have please let me know. Also, happy halloween back at ya Vernon!

Oh, opieslady, I really love the idea of sunflowers to go along with the tractor theme!!! I can almost see that combo! You must take pictures when you are through. I have no idea about electricity and codes but good luck and I hope someone can help you figure it out!!! And as long as it all comes out right and you are happy, then don't worry about how long it's taking!!!! I am sure it is going to be perfect- you sure are putting lots of love in everything you are doing! It's gotta show!!!

Hi opieslady, I used the orange filled oreos,they came out pretty good. Don't get over zealous on the chopping of those cookies they wind up the same color! Ask me how I know!

I may make them this week (the oreo balls with orange). Loves pink, how do you know and my recipe is not chopping but in the food processor. Thanks cookinupastorm about liking my sunflower idea. I just have to find things for it. Thanks again cookinupastorm- I hope the electric would hurry up and get fixed because my boyfriend and I are getting almost in disagreements about it. But anyways, everything will get better soon hopefully.

That's normal to have those little squabbles over things like that, opieslady, everything will work out and your relationship will be smooth again. You will see! It's just deciding on all different things together and making choices and decisions together when you have 2 completely different opinions. It will make you closer- just keep things in perspective and don't argue- kiss instead!!!

Cooknup, there's a recipe for saltwater taffy in the Better Homes and Gardens cookbook that I'm going to try. It takes a lot of effort, but I think it would be worth the effort. I've never made saltwater taffy before, but I want to give it a whirl!!

Coconut Cupcakes

I came across this recipe and HAD to try it! If you like coconut this will satisfy your cravings. Using my KitchenAid made this recipe a very simple task. Blending the butter and sugar, no problem, one egg at a time, just keep her running. Mixing the frosting was just as simple, the mixing of the cream cheese and butter looked almost silk like. All this almost hands free.......
Talk about making ones life easier! Thank You KitchenAid!



Coconut Cupcakes

1-1/2 cups butter, softened
2 cups sugar
5 eggs
1 to 1-1/2 teaspoons vanilla extract
1 to 1-1/2 teaspoons almond extract
3 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
1-1/4 cups flaked coconut

CREAM CHEESE FROSTING:
1 package (8 ounces) cream cheese, softened
3/4 cup butter, softened
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
2-3/4 cups confectioners' sugar
Additional flaked coconut, toasted
Directions
In a large bowl, cream butter and sugar until light and fluffy. Add eggs, one at a time, beating well after each addition. Beat in extracts. Combine the flour, baking powder, baking soda and salt; add to creamed mixture alternately with buttermilk, beating well after each addition. Fold in coconut.
Fill paper-lined muffin cups two-thirds full. Bake at 350° for 18-20 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely.
For frosting, in a large bowl, beat the cream cheese, butter and extracts until smooth. Gradually beat in confectioners' sugar. Frost cupcakes; sprinkle with toasted coconut. Yield: 2-1/2 dozen.


Nutrition Facts: 1 serving (1 each) equals 323 calories, 19 g fat (12 g saturated fat), 81 mg cholesterol, 265 mg sodium, 36 g carbohydrate, 1 g fiber, 3 g protein.

I love coconut- but I am the only one in the family here who does so if I did attempt that recipe you know who would be eating the entire batch, don't you??????
