Here is a recipe for cornish chicken that I came up with.

BEFORE YOU COMMENT, This is NOT cornish game hen, rather it's a chicken stuffed with a cornish game hen, with two layers of stuffing...

Here's the recipe and some pictures!!!

CORNISH CHICKEN.

1 large fryer or small roaster chicken

1 good size cornish game hen

4 good slices homemade 100% whole wheat bread, (the slices should be thick)

Italian seasoning for stuffing and the bird

Water for the bread in the stuffing

Unsalted Homemade butter

Salt and pepper to taste


Take both birds and cut the back bones out of them. Work from the inside, debone the birds from the inside. The chicken should still have its leg bones and wings attached, but the rest of the bones should be removed, the Cornish game hen should have all the internal skeleton removed. The birds should look like this when you're done...

To make the stuffing, Take your thick slices of bread and cut them into cubes. add them to a 3 qt saucepan and add the seasonings and butter. Cook until soft, but not too mushy. (I used day old bread that I cut up and made into stuffing.) The stuffed bird should look like this: (you will need to season the bird too, and when you close the bird, use toothpicks or cocktail skewers to close the bird.)




Place into a preheated 300 degree oven. You'll want to roast it for about 1 hour and 45 minutes at this temperature. During the last hour, increase the temperature to between 350 and 375 degrees. Baste every 25-40 minutes with homemade butter. When a instant thermometer reads about 165 degrees, remove from oven and let rest for about 10-15 minutes. It should look like this when done...

Be prepared to spend a generous amount of time making this dish, (it took me over 4 hours to make it from start to finish), and you'll have a treat anyone would be proud of!!!!

That looks really wonderful, Vernon!! I am sure it tasted as good as it looked! You come up with some good ideas!

This is practice for a turducken that I'm going to make for Thanksgiving!!!

Vernon, that's brilliant! Thanks for sharing! I probably don't have the patience to try it, even though I'd have the time.

When my younger daughter was pregnant with my first grandbaby, we threw a big blowout baby shower at my older daughter's house. I made all the food. I decided to do something off-the-wall with a rather large turkey, so I took a Cornish hen and nestled it between the turkey's legs, partially inside the cavity. When all the guests had arrived, I took the roaster out of the oven, and with a dramatic flourish removed the lid and said, "Look, ladies! Delivery room!"

It took me a bit of time, and I was rather hungry, so waiting for the meal to be done was a little tough, but it was worth it!!!!
